			<content:encoded><![CDATA[<p>Yes, I&#8217;m back again. I decided to give my return to a Low Carb way of eating a week or so before I got back to blogging about it. Needless to say I fell way off the wagon. The &#8220;wake up&#8221; call to me happened about two weeks ago. I was having terrible muscle spasms and could hardly walk though my condo without feeling my heart feeling like it was going to thump out of my chest.</p>
<p>I had a physical in January and for the most part I&#8217;m in pretty good health (according to the test numbers) for someone so overweight and who has diabetes. The one thing that my doctor was concerned about (haven&#8217;t talked to him yet, just got the message through his nurse) is that my HDL is 100 and the ADA thinks that anyone with Diabetes should be under that. She said he wanted to start me on a generic statin. I told her that the Doctor and I have had the &#8220;statin discussion&#8221; before and I won&#8217;t take them.</p>
<p>Anyway, it&#8217;s time to get back on the wagon and do something. I told a friend that the very high glucose reading I had a few weeks ago was like the Lord giving me a thunk on the head telling me to wake up and do something. In the span of two weeks I&#8217;ve got my glucose levels down to where I feel the best and, I&#8217;ve lost two pounds! That&#8217;s between Friday and Friday &#8211; I try not to weigh myself everyday but only once a week which is Friday morning. I&#8217;m even feeling like I have a bit more energy. I even went out last weekend shopping for several hours and went out twice yesterday.</p>
<p>My &#8220;downfall&#8221; has always been things like potato chips and fries. Well, when I was out and went to my favorite &#8220;fast food&#8221; place I only got a plain cheeseburger with everything on the side. I didn&#8217;t eat the bun and the &#8220;side&#8221; stuff was like having a small side salad. That and a large unsweetened iced tea was my lunch and very satisfying. This is not a normal fast food burger but a very good one that&#8217;s just beef and American cheese. I&#8217;ve been eating lots more salads and even got the nerve to make some chicken salad. I&#8217;ve never considered myself a good cook &#8211; but found that I can make really good simple recipes.</p>
<p>One recipe that I&#8217;ll put on the Video Recipe part of the blog was done by Jes from <a href="http://www.kitchentableproductions.net/" target="_blank">Kitchen Table Productions</a> and it&#8217;s Pork Chops in Mustard Tarragon Sauce. It was fantastic &#8211; though didn&#8217;t heat up the next day very well &#8211; I think the term is my &#8220;sauce broke.&#8221; Next time I make it my son will be here for dinner and I&#8217;ll only make two chops and put the other in the freezer. <p>I&#8217;m going to be back with more &#8211; just wanted to get the first post of my &#8220;return&#8221; and thank all of those who have posted comments before. 			<content:encoded><![CDATA[<p>I so appreciate Jimmy Moore listing me in his blogs to visit while he&#8217;s on vacation and thank you to those who stop by. I know there&#8217;s not much here, but I can&#8217;t believe how keeping this blog is making a difference in how I&#8217;m looking at this new effort to get my health in order. Thank you, all.</p>
<p>One big advantage to going low-carb is that I&#8217;m saving money. Even though my grocery bill might be going up &#8211; I&#8217;m not going to the fast food places as much. I&#8217;m actually making breakfast &#8211; gotta find some alternatives to just scrambled eggs and bacon, and I&#8217;m making my own lunch.</p>
<p>Though I have found a few ways around my needing to go out and get something. One day I was just very busy and found myself out about three times during the day &#8211; very unusual for me. I found out that at McDonald&#8217;s I could order a bacon, egg, and cheese bagel &#8211; without the bagel. I decided I&#8217;d rather not do that again &#8211; but in a pinch, it is there. Then for lunch I got a jumbo hot dog with everything &#8211; except peppers, and ended up feeding the bun to the birds. For dinner I had an Italian Sub &#8211; and didn&#8217;t eat the bread. Not the best day of eating &#8211; but better than I used to do.</p>
<p>And best of all, my blood sugars are dropping like crazy. I might actually be able to make my doctor happy next time I see him.</p>
<p>Once again, thank you for stopping in to see my babblings. I guess it&#8217;s time to go over to Jimmy&#8217;s messageboard and join in. Isn&#8217;t it just the craziest thing to know that perfect strangers are out there reading our words?</p>

			<content:encoded><![CDATA[<p>Monday I didn&#8217;t eat too much during the day &#8211; mostly crackers and cottage cheese. I just didn&#8217;t feel that well. Had a cheeseburger and fries for dinner. Finished off a large bag of potato chips I&#8217;d had left over from the weekend. </p>
<p>Tuesday I had some cottage cheese for breakfast, a wrap for lunch, but by the afternoon I was feeling really, really bad. I had some cereal which helped a little. For dinner my son, Dave, made what has to be one of the best steaks I&#8217;ve ever had on the grill along with about 2/3 of a cup of rice and veggie mix. Not the greatest thing, but I did feel better after eating the steak (a NY strip.) Before going to be I had two all-beef hot dogs with a bit of mustard and relish (no sugar.) I really think the protein helped since I was able to sleep for six hours straight &#8211; which is not usual for me. </p>
<p>This is Wednesday and I woke up feeling much, much better. I made myself two scrambled eggs (cage free) and two pieces of bacon (non-cured with no additives.) The gal who is helping me with the re-orgainzing of my home after remodel was here and we worked for close to three hours. About two hours into it I was hungry so had some of the Probiotic cottage cheese that is just so good. For lunch I made a wrap with the La Tortilla Factory Tortillas Low Carb Whole Wheat Original 7&#8243; that I spread a small blend of mayo, mustard, and relish, then added a piece of Swiss Cheese and 2 slices of thin sliced ham. I rolled it up, cut it in a few pieces, and enjoyed. And most of all I feel much better. For dinner we&#8217;ll have bbq chicken on the grill, a salad, and maybe a small baked potato. </p>
<p>Will write later on in the week with an update on the next few days. </p>

<p>It was so encouraging to have Jimmy and Christine suggest to others to start a blog &#8211; especially since I have finally made the commitment to including eating better in my &#8220;new life&#8221; a blog seems like a natural extension. One of the main things about doing a blog is the issue of accountability. For me it&#8217;s easy to just think &#8211; well, in another month or so I&#8217;ll be able to start. By starting the blog and commiting to it I&#8217;m really commiting to myself. </p>
<p>Another great thing about a blog is that it gives me a chance to see how many changes I&#8217;ve made and how they effect my life and health. </p>
<p>A blog also allows me to keep my low carb information in one place. It&#8217;s why I&#8217;ve got the video library &#8211; so I can find the videos that are important quickly &#8211; but yet I do check out the websites they come from for other non-video information. </p>
<p>And having the menu section will make me accountable for what I say I&#8217;ll eat &#8211; and what I end up actually eating. </p>
<p>And even as Jimmy said about when he started his blog. I don&#8217;t know if anyone will find me or read this, but for me, it&#8217;s one step I&#8217;m taking to change my life. </p>

<p>So, it&#8217;s time to not only get the place I live in order, but my businesses, and my health. I look at my eating better as a way to deal with the various health issues and such that I deal with.</p>
<p>You might ask, why &#8220;Low Carb &#8211; My Way?&#8221; Well, first I was surprised to find the domain available. lol As for dieting or a new way of eating (much better because it expresses a new take on life) I think we are all different. While someone might be able to do very well on a high fiber program, it might not work for someone else. While some people can eat anything on the planet, there are those of us who even look at a piece of layer cake and we gain weight. Same thing for all WOE &#8211; we are all different. So, I want to explore what works for me, post the results here, and maybe you can share what works for you.</p>
<p>I think I&#8217;ll write more about this in the About Me page so it&#8217;s easier to find.</p>

			<content:encoded><![CDATA[<p>I&#8217;ve created this site to be an aid to me in getting my health issues and weight under control. This probably is the toughest part of setting up this site since it&#8217;s where I have to be total honest about what is going on with me. </p>
<p>I&#8217;m currently 61 years old. Man, that sounds so old, but yet in these days it&#8217;s really not that bad. I&#8217;m one of the first Baby Boomers. I&#8217;m a single mom with a wonderful son who is as supportive as can be.</p>
<p>Currently my medical conditions include Fibromyalgia, Arthritis, Hypertension, Diabetes, and Anxiety Disorder. Thankfully the AD is controlled by Paxil. Maybe some day I&#8217;ll recount the way AD has effected my life, but I want to look forward. </p>
<p>My weight at the doctor&#8217;s office was 320. </p>
<p>I&#8217;ve chosen to follow a Low Carb diet because it&#8217;s worked for me before and I believe it&#8217;s the best way to work to controlly my Diabetes. </p>
