Monday I didn’t eat too much during the day – mostly crackers and cottage cheese. I just didn’t feel that well. Had a cheeseburger and fries for dinner. Finished off a large bag of potato chips I’d had left over from the weekend.
Tuesday I had some cottage cheese for breakfast, a wrap for lunch, but by the afternoon I was feeling really, really bad. I had some cereal which helped a little. For dinner my son, Dave, made what has to be one of the best steaks I’ve ever had on the grill along with about 2/3 of a cup of rice and veggie mix. Not the greatest thing, but I did feel better after eating the steak (a NY strip.) Before going to be I had two all-beef hot dogs with a bit of mustard and relish (no sugar.) I really think the protein helped since I was able to sleep for six hours straight – which is not usual for me.
This is Wednesday and I woke up feeling much, much better. I made myself two scrambled eggs (cage free) and two pieces of bacon (non-cured with no additives.) The gal who is helping me with the re-orgainzing of my home after remodel was here and we worked for close to three hours. About two hours into it I was hungry so had some of the Probiotic cottage cheese that is just so good. For lunch I made a wrap with the La Tortilla Factory Tortillas Low Carb Whole Wheat Original 7″ that I spread a small blend of mayo, mustard, and relish, then added a piece of Swiss Cheese and 2 slices of thin sliced ham. I rolled it up, cut it in a few pieces, and enjoyed. And most of all I feel much better. For dinner we’ll have bbq chicken on the grill, a salad, and maybe a small baked potato.

On the Menu Blog for my site I’ve added a page that deals with blanching vegetables – and I suppose with all food storage. Guess I’ll change the name of the page.
In the news we are hearing about the problems with food. The cost of gas is going up daily which means the cost of everything is going up. I’m not really an alarmist but since moving back into my condo and working to simplify my life I’m also aware of getting all of my life organized, which includes one of my biggest faults – wasted food. When I order my groceries I have the best intent at heart that this time I’m really going to cook that brocolli. But then a week late it goes out in the trash. btw, what is it about blogs that gets you to “tell” on yourself. lol
This weekend I was watching QVC and they had on this great new version of a Food Saver. I soooo wanted to buy it – I mean it was on Easy Pay no less. But, I’ve purchased and donated atleast two – maybe three – Food Savers. I just couldn’t get them to work for me – and when it went into the cabinet it was gone for good. I was proud of myself for resisting. But I still was sold on the idea that I
wanted to preserve some local produce. I had told my son about the Reynold’s Handi Vac and he picked one up. It worked great. I looked at a similar one from QVC and the reviews weren’t the best, so I went to Amazon and looked at the reviews for it and the majority were positive. So I decided that I’d use that. If I get really good at this I might treat myself to the fancy Food Saver but for now I’ll stick with the hand-held Handi-Vac.
My plan at first was quite grandiose. I was going to buy five pounds of green beans at the Farmers Market this Saturday – then I thought better and decided two pounds would be enough. That should be about four 2-person servings and something reasonable to attempt with my first try.
I’m hoping the Handi-Vac will work on meat. I normally have my groceries delivered, which does cost but I know in the end it saves me money – no impulse buying. So this week they have bone-in chicken breasts for half price. This would certainly be a time to buy a dozen or so and then put them in the freezer in packs of two. I also have a great meat market across the street and if the meat freezing works I’ll go over their once a month. Then there is an even bigger meat market on the other end of town where I could go.

One of the sites I follow is Jimmy and Christine Moore’s site – Livin’ La Vida Low Carb – and was pleased to see their latest YouTube Video where they discuss why it’s important to start a blog. Click Here to see the video.
It was so encouraging to have Jimmy and Christine suggest to others to start a blog – especially since I have finally made the commitment to including eating better in my “new life” a blog seems like a natural extension. One of the main things about doing a blog is the issue of accountability. For me it’s easy to just think – well, in another month or so I’ll be able to start. By starting the blog and commiting to it I’m really commiting to myself.
Another great thing about a blog is that it gives me a chance to see how many changes I’ve made and how they effect my life and health.
A blog also allows me to keep my low carb information in one place. It’s why I’ve got the video library – so I can find the videos that are important quickly – but yet I do check out the websites they come from for other non-video information.
And having the menu section will make me accountable for what I say I’ll eat – and what I end up actually eating.
And even as Jimmy said about when he started his blog. I don’t know if anyone will find me or read this, but for me, it’s one step I’m taking to change my life.

I went to my doctor yesterday and my weight was 320. I just weighed myself on my home scale and I’m 310. At this point what is important is that I keep track of the loss – and worry about what my final weight is down the line.
I’m going to make Friday Mornings my at-home weighing time. I’m not expecting any loss this first week since, to be honest, I just didn’t plan for it. Over the next two weeks I’m going to work on some recipes, seeing if I can figure out how to cook a decent chicken breast, and then, on July 1, 2008 I’m going to make the commitment to this new way of eating. Yeah, I know it’s just an excuse, but atleast I’m honest about it.
My longterm goal is to get under 200. Right now I want to lose 11 pounds and get under 300 on my scale. After that I’ll set another goal. I need to do some excercise which for me is walking. I’ll start with 5 minutes in the morning and afternoon and eventually work up to half an hour once a day.

As always, I put things off as much as I can. I’m going to give myself this week to finally get my system set up. I go to see my doctor on Thursday and will use that weight as my starting point – and co-ordinate it with what I weigh on Friday morning.
Right now I’m putting up the videos I’ve found around the net. I’ve also started a weekly menu section for the blog that will be seperate from this. Might also keep recipes I want to try there and then move them over to this section once I’ve tried them.

I figured I’d make the first post a bit generic and put all the vital info in the About Me page.
So, it’s time to not only get the place I live in order, but my businesses, and my health. I look at my eating better as a way to deal with the various health issues and such that I deal with.
You might ask, why “Low Carb – My Way?” Well, first I was surprised to find the domain available. lol As for dieting or a new way of eating (much better because it expresses a new take on life) I think we are all different. While someone might be able to do very well on a high fiber program, it might not work for someone else. While some people can eat anything on the planet, there are those of us who even look at a piece of layer cake and we gain weight. Same thing for all WOE – we are all different. So, I want to explore what works for me, post the results here, and maybe you can share what works for you.
I think I’ll write more about this in the About Me page so it’s easier to find.
