			<content:encoded><![CDATA[<p>I&#8217;m sure I&#8217;m not the only one who has a problem keeping up with my blog &#8211; mostly because I know I haven&#8217;t stuck to my WOE. But, as I said in a post awhile ago &#8211; gotta get serious. </p>
<p>Last Monday I weighed myself and I was 295. At least I hadn&#8217;t gone over the 300 mark. Today, Sunday, I got on the scale and was 289 or so. There&#8217;s two reasons for the big loss. One is that I was very good at keeping to my low-carb plan and also my doc upped one of my meds (water pill) and I think that accounts for a few pounds. </p>
<p>One think I&#8217;ve got to work on is simple recipes. I made a chicken and vegetable dish that took me about an hour to prepare and make. That would be ok if it was a slow-cooker recipe cause I&#8217;d have the day to recover &#8211; but I hate taking a long time to prep stuff and cook. I get so tired. </p>
<p>I didn&#8217;t think that the stroke had much of an effect, but I think it has. Anyway, time to work on getting recipes that are just a few ingredients or that I can cook in my slow cooker. My favorite recipe is what I call my &#8220;5 minute dinner.&#8221; It&#8217;s Kansas City Steaks steakburgers (love &#8216;em) and some kind of veggie that I can nuke. I use my Rocket Grill to cook the burgers &#8211; which take all of three minutes &#8211; and the veggies cook in about two. That&#8217;s my idea of great fast food. </p>
<p>If you happen to have a simple and easy recipe, please consider putting one or two into the comments &#8211; I&#8217;d appreciate it. </p>

			<content:encoded><![CDATA[<p>I&#8217;ve been in the hospital since Monday. I had several small strokes. I feel very blessed and that I experienced a miracle because there is no neurological damage and I&#8217;m feeling fine. </p>
<p>One thing that I found relatively shocking was that I was placed on the American Diabetic Association diet. The menu we ordered from had the carb count for all the selections. I was blown away when I read that ADA diet patients were allowed to chose 65 or 70 carbs *per* meal! That meant I had around 200 carbs a day. And they wondered why my glucose level was so high? </p>
<p>Needless to say I&#8217;m rededicated to following the Low Carb My Way plan for eating which I know allows me to lose weight and keep my glucose levels down &#8211; which is one of the three things I have to concentrate on to improve my health. The other two are my cholesterol which is nearly at the place they should be and will improve the more I lose weight. The other issue is my blood pressure which will also improve with my losing weight. </p>
<p>In the hospital it was &#8220;fun&#8221; to see my weight in kilograms. lol I haven&#8217;t seen those type of numbers since I was in grade school. But, when it came to pounds, I was still under 300. I&#8217;ll get back to weighing myself each Friday next week. My goal for the end of the year is to be at 265# which my doctor thinks is a reasonable goal. And who knows, I might even be able to do better than that. </p>
<p>Time to put in an order for my groceries for the week. Lots of eggs, bacon, meat, and good veggies. </p>
<p>Glad to be home and, as I said above, time to get serious about my Low Carb way of eating. </p>

<p>I know what my problem is &#8211; I don&#8217;t have anything here to eat for most meals so I have to get some groceries in here and stop going out to get food. I have figured out how to eat out that&#8217;s pretty good, like ordering salads, making sure that I don&#8217;t use high carb dressings (or use no dressings) and even when I do order a cheeseburger I don&#8217;t eat the bun. But, time to get back to making stuff at home. </p>

			<content:encoded><![CDATA[<p>This week I&#8217;m at 302. Not as good as last week, but at least I&#8217;m down another pound. I know I wasn&#8217;t as &#8220;good&#8221; as I was last week about staying away from too many carbs. I was kind of concerned that I might not have lost any or gained. But, one pound is one pound. I&#8217;ll do much better this comimg week. One thing I need to start doing is drinking more water. I tend to prefer iced tea. So, my goal for this coming week is to have at least four 8 oz glasses of water a day. Will report next Friday how I&#8217;m doing.</p>
<p>My blood glucose readings have been very good. Though, one day I tested my blood, hadn&#8217;t had anything to eat except bacon and eggs, and right before lunch my reading was about 135. Then an hour or so after my lunch (a salad) my reading was 107. That just seems weird. But, at least it&#8217;s not some kind of astronomical number.  </p>

			<content:encoded><![CDATA[<p>I went back and read my previous posts that I&#8217;ve made since getting back on my program and realized I hadn&#8217;t mentioned my weight.</p>
<p>Two weeks ago I was 307. Last Friday I was 305 and today when I weighed myself I&#8217;m 303. That&#8217;s two pounds a week. Not bad at all. I&#8217;d really like to keep up that pace, just have to keep working on it. My first goal is to get under 300. If I look at all the weight I want to drop it will become too depressing. lol</p>
<p>I did very well this week except for yesterday. My son picked up some fantastic Italian food from Carrabba&#8217;s. I had three different chicken dishes and have plenty for lunch. Where I went a bit astray was I ate the garlic mashed potatoes and one piece of what has to be the most delicious pizza I&#8217;ve ever had in my life. I&#8217;ll have some of it for lunch, but won&#8217;t eat the crust &#8211; just the fantastic three cheeses, spinach, and sun-dried tomatoes.</p>
<p>Well, it&#8217;s time to put together a menu and shopping list for next week. Will try one or two new recipes to see if I can find something to add to my routine. I think I&#8217;ll look for a slow cooker recipe that makes lots of good leftovers.</p>

<p>I&#8217;ve been doing pretty good this week. I only messed up at one meal. I rationalized to myself that since I&#8217;d had a low glucose count yesterday afternoon I had a small fries with my cheeseburger &#8211; though I didn&#8217;t eat the bun on the burger. </p>
<p>But, I&#8217;m back on track today. Had two fried eggs and some bacon for breakfast and then for lunch had a plain burger with some Brussel Sprouts and butter. Very satisfying. I think I&#8217;ll make some egg salad or Deviled eggs this afternoon to use up the eggs I&#8217;ve got before I get some new ones in my PeaPod order. </p>
<p>Well, I&#8217;ll be back tomorrow with my weigh-in and maybe a new video I find on You Tube. </p>

<p>Last night Dave and I made tacos. I had mine with low-carb tortillas and he had the regular hard taco shells. They were so good and this time I had sour cream to put on them &#8211; yum. Next time I need a few black olive. </p>
<p>Yesterday was a pretty tough day. I had another hypoglycemia attack. They just knock me on my butt. I took two of my glucose tablets and Dave, fortunately, was out on his lunch hour and brought me a fountain coke (didn&#8217;t finish it) and a bit of very dark chocolate. It took about an hour but my glucose levels did finally get back to close to normal. This morning they were a bit higher than normal, but that&#8217;s probably because I skipped two of my meds at dinner time. Didn&#8217;t seem like a good idea to take them after the low glucose problem. </p>
<p>But, I&#8217;m feeling somewhat better today. Atleast I can see the computer screen and don&#8217;t have the awful headache. </p>
<p>Well, enough bellyaching. <img src='http://www.lowcarbmyway.com/blog/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' />  Time to get some work done. </p>

			<content:encoded><![CDATA[<p>Last week I went to see my MD and took my notebook where I&#8217;d been keeping track of my glucose readings since early July. He was very, very happy about the information and of course the good readings. We discussed the few hypoglycemia problems I&#8217;d had. He said that as my body got used to the lower glucose readings I would be able to tolerate the lower readings. We&#8217;ll see. <img src='http://www.lowcarbmyway.com/blog/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </p>
<p>He wanted to do some tests. My A1C was 7.1 which, for me, is incredibly good. I think I was up in the mid-teens a year ago. My cholesterol readings are good &#8211; so we don&#8217;t have to have the statin arguement again &#8211; which makes me happy. He did up one of my blood pressure meds even though I do pretty well at home. Can&#8217;t help it &#8211; I&#8217;ve got White Coat Hypertension and always have slightly high BP &#8211; especially right after getting into the room. Anyway, it&#8217;s not a big upgrade in my med, so we&#8217;ll see what happens. I do have to go get an ultrasound of my thyroid.Â  I have a slight lump &#8211; much like other lumps I have on my upper chest. It&#8217;s all part of the fibromyalgia and the arthritis I have in my chest. Anyway, he&#8217;s not real concerned about it but it&#8217;s better to find out what it might be than just let it go.</p>
<p>Last night my son and I made dinner together. We tend eat carry-out way too much. The problem is, to be honest, is that when I cook I get overheated or something and just can&#8217;t eat. So, we came up with a new plan. I get all the ingredients out for the meal and then he cooks it. Now that&#8217;s not going to work for a slow cooker meal (which I&#8217;m pretty good at since I can do it in the morning) but for Chicken Parm it was great. Also, Dave likes to cook and like just about everything in his life &#8211; he likes to Davize it. I told him what the recipe said and he&#8217;s already figured out how he&#8217;ll do it differently. So, I think this will work and will save us a lot of money &#8211; well, will save Dave money &#8211; because he won&#8217;t be picking up dinner on the way home. Plus, I&#8217;ve got a big chicken parm with green beans for lunch. Tonight &#8211; Taco Salad for me and Tacos for Dave (he can have the taco shells.) I have some low-carb tortillas so might have one of those with the taco fillings and then eat more as a salad.</p>
<p>Hope to have some good news about the scale next week. I didn&#8217;t weigh myself this morning but did the other day and I&#8217;d gone up a pound. Going to work hard to finally break that 300lb mark. Also, the doctor&#8217;s scale and mine are very close. Just a minor factoid. lol</p>
