Friday Weigh-In – 5/14

This morning my weight is 294 for a total, since I started at 307, of 13 pounds.
I’m feeling much better since I’ve been Low-Carbing it again. Luckily I don’t eat too fancy – a hamburger patty and some veggies is a good dinner for me. I did make something this week that I think will become a staple. It’s chicken cooked in heavy aluminum foil. I took a bone-in chicken breast, some butter, and fresh broccoli and place them on a big piece of foil, rolled up the top and sides to seal the package, then put it in a 350 oven for about 50 minutes. I plan to do this again tonight but I’ll marinate a boneless chicken breast in Italian Dressing (lo-carb, of course) and then cook it with the rest of the broccoli and some asparagus. Should be good. Will try it with fish next week to see how it works and report on it.
