I’m sure I’m not the only one who has a problem keeping up with my blog – mostly because I know I haven’t stuck to my WOE. But, as I said in a post awhile ago – gotta get serious.

Last Monday I weighed myself and I was 295. At least I hadn’t gone over the 300 mark. Today, Sunday, I got on the scale and was 289 or so. There’s two reasons for the big loss. One is that I was very good at keeping to my low-carb plan and also my doc upped one of my meds (water pill) and I think that accounts for a few pounds.

One think I’ve got to work on is simple recipes. I made a chicken and vegetable dish that took me about an hour to prepare and make. That would be ok if it was a slow-cooker recipe cause I’d have the day to recover – but I hate taking a long time to prep stuff and cook. I get so tired.

I didn’t think that the stroke had much of an effect, but I think it has. Anyway, time to work on getting recipes that are just a few ingredients or that I can cook in my slow cooker. My favorite recipe is what I call my “5 minute dinner.” It’s Kansas City Steaks steakburgers (love ‘em) and some kind of veggie that I can nuke. I use my Rocket Grill to cook the burgers – which take all of three minutes – and the veggies cook in about two. That’s my idea of great fast food.

If you happen to have a simple and easy recipe, please consider putting one or two into the comments – I’d appreciate it.

Since it’s been way too easy for me to slip into the “drive thru” or “frozen entree” lunch and dinner cycle recently, I decided that I needed to take advantage of our local Saturday Farmers Market and the wonderful meat market in my neighborhood.

At the Farmers market I got tomatoes, lettuce, broccoli, green beans, strawberries, zuchinni, and summer squash. With the veggies I’ve got in the freezer I have enough for the week. Then I stopped at the meat market which has some great prepared and frozen food. Everything is made on site and contains only fresh ingredients. So I got a Rock Cornish Game Hen which I’ll have for dinner tonight with lettuce and tomato salad. Then I got an Italian marinade Chicken Breast which I’m going to try cooking in my Rocket Grill. I also got a small meatloaf. If I like it, I’ll buy the bigger one and then use what I don’t eat for lunch or freeze for future dinners. They also have frozen entrees. I got three of these – but I’ll probably give two of them to my son who is working late and the meals are pre-cooked and the frozen, so only take a short time to cook in the microwave.

Now I have to put in an order for the rest of my groceries. We have PeaPod locally and I can get my eggs, bacon, and household goods from them – and it’s delivered.

I’m going to try to post daily, at least this week, to see how I do.

I really fell off the wagon last week and have to get back into eating correctly. After having the stroke it’s now more important than ever that I eat properly. Friday I had a terrible case of hypoglycemia and ended up having to take a glucose tablet to get my level up. I think I know what happened. I took my glucose meds without eating. Anyway, going to do better.

Friday Weigh-In 6-4

I’ve been “off the wagon” for a week or so but this week I was much, much better. I had gained a few pounds, but I’ve lost those. This morning my weight is 291. It’s encouraging to see the number going in the right direction – down!

Friday Weigh-In – 5/14

This morning my weight is 294 for a total, since I started at 307, of 13 pounds.

I’m feeling much better since I’ve been Low-Carbing it again. Luckily I don’t eat too fancy – a hamburger patty and some veggies is a good dinner for me. I did make something this week that I think will become a staple. It’s chicken cooked in heavy aluminum foil. I took a bone-in chicken breast, some butter, and fresh broccoli and place them on a big piece of foil, rolled up the top and sides to seal the package, then put it in a 350 oven for about 50 minutes. I plan to do this again tonight but I’ll marinate a boneless chicken breast in Italian Dressing (lo-carb, of course) and then cook it with the rest of the broccoli and some asparagus. Should be good. Will try it with fish next week to see how it works and report on it.

Time to get very serious

I’ve been in the hospital since Monday. I had several small strokes. I feel very blessed and that I experienced a miracle because there is no neurological damage and I’m feeling fine.

One thing that I found relatively shocking was that I was placed on the American Diabetic Association diet. The menu we ordered from had the carb count for all the selections. I was blown away when I read that ADA diet patients were allowed to chose 65 or 70 carbs *per* meal! That meant I had around 200 carbs a day. And they wondered why my glucose level was so high?

Needless to say I’m rededicated to following the Low Carb My Way plan for eating which I know allows me to lose weight and keep my glucose levels down – which is one of the three things I have to concentrate on to improve my health. The other two are my cholesterol which is nearly at the place they should be and will improve the more I lose weight. The other issue is my blood pressure which will also improve with my losing weight.

In the hospital it was “fun” to see my weight in kilograms. lol I haven’t seen those type of numbers since I was in grade school. But, when it came to pounds, I was still under 300. I’ll get back to weighing myself each Friday next week. My goal for the end of the year is to be at 265# which my doctor thinks is a reasonable goal. And who knows, I might even be able to do better than that.

Time to put in an order for my groceries for the week. Lots of eggs, bacon, meat, and good veggies.

Glad to be home and, as I said above, time to get serious about my Low Carb way of eating.

Flax Seed Oil

About a month of so ago I started taking Flax Seed Oil. I take the 1000mg from The Vitamin Shoppe twice a day. They have not only Omega 3 but also Omega 6 and Omega 9. I really think that this has helped greatly with my weight loss. I’ve never lost weight this fast. I also noticed (before I got this cold) that I was able to sleep a lot more at night than I had before. Friday Weigh-In – 4-2

I certainly wouldn’t recommend being sick as a way to lose weight, but I have had a bad cold this week and really haven’t have much to eat. But, I was still surprised when I got on the scale and I’m at 297! I’ve broken the 300 mark – yipeeeeee – and I lost three pounds this week. Incredible.

Friday Weigh-In – 3/26

I have to say I’m surprised I’ve lost anything because I was so off the program, but, I’m at 300, so I did lose another pound this week.

I know what my problem is – I don’t have anything here to eat for most meals so I have to get some groceries in here and stop going out to get food. I have figured out how to eat out that’s pretty good, like ordering salads, making sure that I don’t use high carb dressings (or use no dressings) and even when I do order a cheeseburger I don’t eat the bun. But, time to get back to making stuff at home.
